THE SEMINARIO

This majestic building was constructed in the C17th at the order of Don Bartolomé de Risoba, Bishop of Sigüenza. The building adjoins the Episcopal Palace and together is the third part of a triangle of monuments, the medieval castle – now a Parador hotel - and the wonderful Cathedral (C12-14th).

The Bishop's Palace was formerly the home of the University of Sigüenza, one of whose first rectors was Cardinal Cisneros, who later founded the present University of Alcalá de Henares, itself one of the oldest in the world. The decreasing need for the Seminary by the Diocese had created the opportunity to revitalise the buildings providing approximately 10,000 m² to the activities of the IEdeG. The Seminario Mayor was rebuilt in 1952 and though its original use has slowly reduced it remains a central and vital building in the city.

The restoration being carried out by the IEdeG absolutely maintains the integrity of the original architecture and historic and archaeological studies have been carried out with this in mind. The reconstruction plan and execution will create a unique and stunning setting for the Institute.

The allocation of space in the Seminario planned by the IEdeG includes various residential areas, classrooms, a series of professional teaching kitchens, conference rooms and technical spaces, a library, exhibition and events space, a theatre, a wine auditorium, a museum, two restaurants, one of which will be "haute cuisine", as well as a commercial area containing shops offering products related to the world of gastronomy. Specific areas have been designed to accommodate children’s tuition and that of older people and also the public. The Instituto Español de Gastronomía has been conceived as a teaching establishment and the commercial activities that accompany it will respect the spirit of the site and its importance to the city of Sigüenza. The residents and visitors will be able to enjoy a calm atmosphere within a teaching establishment and will be required to respect the academic nature of the buildings.
